Genral Chef/Head Chef - Abu Dhabi

European Chef; General/Head Chef
(Living in Abu Dhabi or Dubai)
Restaurant Location: Abu Dhabi City

Duties & Responsibilities:
• Overlook the entire preparation and cooking procedure in the kitchen.
• Prepares a variety of seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
• Assumes 100% responsibility for quality of products served.
• Knows and complies consistently with our standard portion sizes, cooking & preparation methods, quality standards and kitchen rules, policies and procedures.
• Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
• Portions food products prior to cooking according to standard portion sizes and recipe specifications.
• Maintains a clean and sanitary work station area including tables, shelves, microwaves and refrigeration equipment.
• Prepares item for broiling, mixing or other cooking methods by portioning, seasoning and/or marinating.
• Follows proper plate presentation and garnish set up for all dishes.
• Handles stores and rotates all products properly.
• Responsible in food prep assignments during off-peak periods as needed.
• Closes the kitchen properly and follows the closing checklist for kitchen stations.
• Attends all scheduled employee meetings and brings suggestions for improvement.
Qualifications:
• Male, most preferable nationality is European; other nationality will be accepted as long as they meet the qualifications as per follows.
• A minimum of 5 to 10 years of experience in kitchen preparation and cooking.
• Must have excellent management skills
• Has the capacity to lead the whole kitchen staffs
• Knows fusion kitchen, knows latest trends
• With background in Italian, French, European, American cuisine
• In addition, with experience and excellent in fusion kitchen and specializing American delicacies, sandwiches and salads.
• Must be able to communicate clearly with managers, kitchen and dining room personnel.
• Must be in Abu Dhabi or Dubai or within UAE and would be willing to move to Abu Dhabi.

Salary: Monthly salary is negotiable and will depend on the qualifications of the candidate.
(AED10,000 to 15,000)
